Brazil discovers Greek spaghetti as Mediterranean diet dream

A recipe for Greek spaghetti with meat sauce offers a way to bring Mediterranean diet flavors into the home kitchen. The dish, developed by cookbook author Kelly Jaggers, is designed for an Instant Pot pressure cooker.

The recipe calls for lean ground veal, white wine, tomato sauce, and a cinnamon stick, along with bay leaves and garlic. These ingredients create a fragrant sauce. The author recommends using aged myzithra cheese, a Greek cheese, but notes that Parmesan can be used as a substitute.

The meal serves five people. According to the recipe, each serving contains 550 calories, 22 grams of protein, 17 grams of fat, and 72 grams of carbohydrates. The nutritional information is provided as an estimate and may change based on the specific ingredients used.

The cooking method involves two stages in the Instant Pot. First, the spaghetti is cooked in water with olive oil for four minutes under pressure. After draining the pasta, the cook sautes onion and veal, then adds the wine, tomato sauce, and seasonings. The sauce then cooks under pressure for five more minutes.

The recipe appears in Jaggers’ book, “The Everything Mediterranean Instant Pot Cookbook,” published in 2020 by Adams Media, an imprint of Simon & Schuster. The Mediterranean diet is often cited for its health benefits, focusing on vegetables, lean proteins, and healthy fats.

This approach to cooking emphasizes simple ingredients and short preparation times, making it accessible for home cooks. The use of an Instant Pot reduces the time needed to develop deep flavors, which is a key feature of many Mediterranean dishes that traditionally require longer simmering. The combination of veal, cinnamon, and tomato sauce reflects a Greek culinary tradition that balances savory and sweet notes.
